Cèpes is also called porcini. These wild mushrooms are very sensitive to weather conditions. This plays a major role in their availability. The cap of the porcini is reddish-brown to dark brown in color and feels sticky. The underside is spongy. The flesh of cèpes is white. The mushroom is nutty and mild in flavor. Very suitable to be used raw in a salad. It is a true delicacy and is not called the 'king of mushrooms' for nothing.
