The name Stracchini comes from the word Stracchino which means "tired" in the dialect and refers to the times when the cows, after the summer period in the alpine meadows, would make a long journey back to the valley to spend the winter there. The milk from wintertime was used to make the Tallegio. Light pink rind with some blue spots and a delicious, somewhat fruity taste.
