
Apple sabayon with caramelized apple and cinnamon ice cream
Classic sabayon with an apple twist.Ingredients
5Egg yolks
3apples
1Lime
60gVending machine sugar
120gApple liqueur
Preparation
- Whisk the egg yolks with the sugar au bain-marie until thick and foamy. Gradually add the apple liqueur.
- Cut the apple to the desired size. Sauté the apple in a little butter. Sprinkle with a little caster sugar and lightly caramelize. Spoon the apple onto a plate.
- Spoon the sabayon over the apple. Place a few quenelles of cinnamon ice cream in between. Grate a little lime zest over and serve immediately.
