Ingredients

1Sushi vinegar

750gBeet juice

5gemulbinder

Mustard cress

Crispy red beet foam

Goat cheese

Preparation

For a pipeable beetroot jelly, mix the beet juice with the sushi vinegar and reduce by half.
Let cool, add the emulbinder, and blend with an immersion blender.
Fill a squeeze bottle with the jelly and set aside in the fridge.
Remove the beet foam from the packaging and make a small hole in it.
Pipe the pipeable beetroot jelly into the hole.
Top with some goat cheese and a sprig of mustard cress. Serve immediately.
