Beetroot foam and goat cheese appetizer

The festive dinner has only truly begun once the appetizers have appeared on the table.

With these appetizers, you will gastronomically surprise your guests. Serve them on stylish and surprising tableware for a festive start to your Christmas dinner!

Ingredients

1Sushi vinegar
750gBeet juice
5gemulbinder
Mustard cress
Crispy red beet foam
Goat cheese

Preparation

  1. For a pipeable beetroot jelly, mix the beet juice with the sushi vinegar and reduce by half.
  2. Let cool, add the emulbinder, and blend with an immersion blender.
  3. Fill a squeeze bottle with the jelly and set aside in the fridge.
  4. Remove the beet foam from the packaging and make a small hole in it.
  5. Pipe the pipeable beetroot jelly into the hole.
  6. Top with some goat cheese and a sprig of mustard cress. Serve immediately.
