
Bisque of shore crab

200gCarrot

3White wine
100gFennel
100gCelery

2gBay leaf
fish stock
140gTomato paste
1Garlic clove
Salt
1white part of leek
Orange peel
700gTomato
crushed peppercorn
Cayenne pepper
crayfish meat or crayfish

Preparation
- Chop the shore crabs into coarse pieces.
- Put them in a pan and sauté in oil, add the tomato paste and deglaze with white wine. Add the fish stock.
- Roughly chop the vegetables and add them along with the peppercorns, orange peel, garlic, and herbs to the crabs and white wine. Let infuse for about 1 hour.
- Strain through a sieve and season with salt, cayenne pepper, and the unsweetened cream. Serve with crayfish meat or crayfish.
