Cauliflower with Parmesan cheese

Sous-vide cooked cauliflower full of curry and rosemary flavors with a delicious Parmesan cheese crust.

Ingredients

200gCrème fraîche
200gParmesan cheese
Pepper
2Cauliflowers
Olive oil (for brushing)
Salt
Finely chopped rosemary
Curry madras to taste

Preparation

  1. Coat the cauliflower with olive oil, curry madras, and salt to taste.
  2. Cook the cauliflower sous-vide for 1.5 hours at 85°C and immediately cool down in ice water.
  3. Mix the Parmesan cheese with the crème fraîche and chopped rosemary.
  4. Before serving, coat the cauliflower with the cheese mixture so it is completely covered.
  5. Gratinate in an oven dish or pan at about 220°C for 8 minutes until the top is golden brown.
