Cauliflower with Parmesan cheese
Sous-vide cooked cauliflower full of curry and rosemary flavors with a delicious Parmesan cheese crust.Ingredients
200gCrème fraîche
200gParmesan cheese
Pepper
2Cauliflowers
Olive oil (for brushing)
Salt
Finely chopped rosemary
Curry madras to taste
Preparation
- Coat the cauliflower with olive oil, curry madras, and salt to taste.
- Cook the cauliflower sous-vide for 1.5 hours at 85°C and immediately cool down in ice water.
- Mix the Parmesan cheese with the crème fraîche and chopped rosemary.
- Before serving, coat the cauliflower with the cheese mixture so it is completely covered.
- Gratinate in an oven dish or pan at about 220°C for 8 minutes until the top is golden brown.
