Meatloaf wrapped with pancetta
Spiced meatloaf of beef or lamb, flavored with cumin, sumac, and cinnamon, wrapped in pancetta for a savory, crispy finish.Ingredients

1kgGround beef or ground lamb

240gPancetta
2Egg yolks
Preparation
- Mix all ingredients except the pancetta.
- Mix the minced meat into a firm, homogeneous mass.
- Grease the cake tin or spray it with baking spray.
- Line a cake tin with the pancetta slices and fill with the meat mixture.
- Bake the meatloaf covered for about 30-40 minutes at 160°C until a core temperature of 68°C is reached.
- Let the meatloaf cool for 15 minutes and then turn it out of the tin.
- If desired, bake briefly at about 200°C before serving for extra crispiness.
