Ibérico rolls with nduja
A flavorful roulade of Ibérico and beef, enriched with nduja for extra spice.Ingredients
Olive oil to taste
Iberico roulade with nduja filling
Thyme to taste
Preparation
- Cook the roulade sous-vide at 49°C.
- Brown the roulade all around in a pan and baste (spoon over with the cooking fat) until a core temperature of about 53°C is reached.
- Let the roulade rest for 5 minutes and serve with fresh thyme to taste.
