
Bourekas with 'new' meat
This dish combines the classic flavor of bourekas with a modern twist by using alternative meat.Ingredients
Olive oil
200gCherry tomatoes
150gOnion
9chopped parsley
2.5Garlic
1.5Salt
Black pepper

250gRedefine minced beef
2pine nuts

Preparation
- Heat the olive oil in a large pan over medium-high heat.
- Chop the onion and finely chop the garlic.
- Sauté the onion until it is soft and golden brown.
- Add the garlic and fry for a minute until the aromas are released.
- Quarter the cherry tomatoes and cook them in the pan until they soften. Keep stirring. Do this for about 10 minutes.
- Add the thawed Redefine Minced Beef and fry over high heat.
- Break up the 'meat' as it cooks.
- Add the chopped parsley, pine nuts, and herbs as soon as the Redefine Minced Beef starts to brown a little.
- Mix the ingredients well and cook for another 5 minutes.
- Remove the pan from the heat and let the filling cool.
- Place the cooled filling in a fine sieve and let all the liquid drain out. This ensures the dough does not become soggy.
- Preheat the oven to 190°C.
- Place a sheet of filo pastry on a work surface and brush it with olive oil.
- Place another sheet on top and brush this one with oil as well.
- Spoon a layer of filling in a line along the long edge of the filo sheets.
- Carefully roll up the double layer of dough into a tight roll. Cut the roll in half.
- Place the two pieces on a baking tray lined with baking paper.
- Repeat this process with the remaining filo sheets until all the filling is used up.
- Brush the bourekas generously with olive oil and sprinkle with sesame seeds.
- Bake the dish in the oven for 30 minutes or until the pastry is golden brown.
- Remove the bourekas from the oven and serve the dish.
