
Mushroom cake
Inextricably linked: autumn and mushrooms. For our chefs, the ultimate challenge is to transform mushrooms into structures, such as this cake.Ingredients

Salt
40gpolydextrose
coffee grinder
300gEgg white
100gAlmond powder
10gdried wild mushrooms
Preparation
- Grind the mushrooms into powder in a small 'coffee grinder'.
- Then blend everything except the egg white in the food processor. Once well mixed, pour in the egg white while blending.
- Strain, pour into a siphon, and charge with two cartridges.
- Let rest in the fridge, pipe halfway into cardboard cups, and bake in the microwave at full power for about 45 seconds.
