Caribbean paella with chicken

The Caribbean paella with chicken is a tropical twist on the Spanish classic, full of spicy chicken, chorizo, prawns, and vegetables.

Ingredients

300gChorizo
700gLong grain rice

Spicy chicken drumsticks
4units.itemsCelery stalks
Chili powder
400gTomato paste
1.5lChicken stock
4units.itemsThyme sprigs
6units.itemsGarlic cloves

Preparation

  1. Brown the chicken drumsticks and chorizo.
  2. Add the onion, bell pepper, celery, bay leaf, and thyme and cook for about 10 minutes.
  3. Add the finely chopped garlic, chili, tomato paste, and chicken stock.
  4. Bring to a boil and let simmer gently for 25 to 30 minutes.
  5. Add the paella rice and stir well.
  6. Cook for 15 to 20 minutes, until the rice is done.
  7. Add the prawns and let them cook briefly.
