Preparation
- Clean the fruit and cut into even brunoise.
- Mix in some of the custard.
- Spoon this into the chocolate flower pots.
- Cut open the packages and pour into a container.
- Place the container in the freezer and stir occasionally with a fork to achieve the characteristic, grainy granita texture.
- Spoon a layer of the granita over the fruit salad in the chocolate flower pot.
- Use a hand blender to mix everything together.
- Put this mixture in a siphon and charge with two cream cartridges.
- Pipe the foam onto the granita.
- Grate the dried raspberries and cut the raspberry meringue, then garnish over the whole.
