10Milk
80gEgg yolk
250gHerve cheese
4gLeaf gelatin, soaked
Preparation
- Heat the milk and dissolve the cheese (in small pieces) in the milk.
- Dissolve the gelatin in it.
- Add the egg yolks.
- Strain the mixture and pour into small bowls.
- Place them in a bain-marie in an oven at 95°C for 25 minutes.
- Let cool, sprinkle with cane sugar, and caramelize to make crème brûlée.
