Crème brûlée of Herve cheese

Ingredients

10Milk
80gEgg yolk
250gHerve cheese
4gLeaf gelatin, soaked

Preparation

  1. Heat the milk and dissolve the cheese (in small pieces) in the milk.
  2. Dissolve the gelatin in it.
  3. Add the egg yolks.
  4. Strain the mixture and pour into small bowls.
  5. Place them in a bain-marie in an oven at 95°C for 25 minutes.
  6. Let cool, sprinkle with cane sugar, and caramelize to make crème brûlée.
