Ingredients

100mlDebic Baking & Frying
1kgyellow carrot
200mlDebic Cooking Cream 20% Original

Preparation

  1. Peel the carrots and vacuum-seal them together with the Debic Bakken & Braden.
  2. Cook sous-vide in a water bath or combi steamer at 85°C for 1 hour.
  3. Finely blend the warm carrots in a blender and add the cooking cream.
  4. Pass the cream through a fine sieve and season with salt.
  5. Plate on the dishes.
