
Curry of whiting
With ginger, shallot, garlic, and eggplant, among others.Ingredients
100gpeeled and diced aubergine (brunoise)
100gyardlong beans
250gcooked krombekken beans
2chopped shallots
Coconut milk
Vegetable stock
1chopped ginger and chopped garlic
dried kaffir lime leaf
Sesame oil
fresh, chopped coriander
green curry paste
Preparation
- Heat some sesame oil in a pan and add ginger, shallot, and garlic. Sweat well.
- Add kaffir leaf (torn) and 1/2 tablespoon curry paste and fry briefly.
- Add beans, eggplant, and yardlong beans and toss everything well.
- Deglaze with stock and a splash of coconut milk and let simmer for a few minutes (until the eggplant is al dente).
- Sprinkle with some chopped coriander before serving.
