Dill mousseline

Airy mousseline with dill oil, sushi vinegar and a hint of pepper. Delicious with fish, poultry or vegetable dishes.Grønn oils are responsible, zero-waste, ready-to-use oils from Benoit Dewitte. Ingredients

Salt
5Egg yolks
freshly ground black pepper
4Gastrique
1Sushi vinegar
250gDill oil

Preparation

  1. Whisk the egg yolks, gastrique, sushi vinegar, a pinch of salt, and a pinch of freshly ground black pepper together in a pan over low heat until you have a smooth sauce.
  2. Make sure the egg yolks do not set.
  3. Remove the pan from the heat as soon as the sauce is smooth and well combined.
  4. Gradually stir in the dill oil until fully incorporated and the mousseline has a nice consistency.
  5. Taste and add extra salt and pepper if needed.
  6. Serve the dill mousseline as a flavorful addition to fish, poultry, or vegetable dishes.
