Dressing of grilled peppadews, ginger syrup and balsamic vinegar.

Ingredients

165gwhole peppadew
Ginger syrup
balsamic vinegar
5Smoked oil
195mlOlive oil

Preparation

  1. Rinse the peppadews well, reserve the liquid from the jar.
  2. Grill the peppadews thoroughly, add the smoked oil, and let them soften well.
  3. Blend the peppadews with the smoked oil and a little of the liquid from the jar.
  4. Strain the mixture.
  5. Season the olive oil with ginger syrup and balsamic vinegar to taste and mix this with the above mixture.
