Blood orange espuma

Cortina (28600980) is an emulsifier for ice cream preparations. It improves firmness, increases volume, prevents crystallization, and retains moisture better.

Ingredients

siphon
optional: 50 grams sugar
20gCortina
500gblood orange purée

Preparation

  1. Mix the fruit puree with the cortina (using a hand blender).
  2. Sieve and pour into a siphon, insert two cream chargers.
  3. Chill until use.
