Flamed salmon in dashi iri ponzu

The beautiful thick piece of salmon is first smoked and then seared by hand.The fattiness of the salmon is perfect to combine with the Dashi iri Ponzu (citrus vinegar with soy sauce, dashi, and yuzu). Ingredients for 4 people.

Ingredients

Picudo olive oil
edame pesto
1.5dashi iri ponzu
1units.itemsflamed salmon
furika ume
lettuce of choice
grilled green asparagus

Preparation

  1. Slice the flamed salmon with a sharp knife and place it in the center of the plate.
  2. Mix the dashi iri ponzu with a little picudu olive oil.
  3. Place a little edamame pesto around it.
  4. Serve with salad, the grilled asparagus, and some furika ume.
