Raspberry and Lychee Foam Soda

Refreshing foam soda with raspberry and lychee puree, emulsified with Naturfoam and served with a sparkling, airy texture.

Recipe by Martín Lippo. This soda is flavored with a blend of raspberry and lychee puree. By combining different fruit purees with Naturfoam, striking and refreshing foam sodas are created.

Ingredients

500gMineral water
20gSugar
2gNaturfoam
70gLychee purée
50gRaspberry purée

Preparation

  1. Put all ingredients in a blender jug.
  2. Blend until smooth.
  3. Strain the mixture through a coffee filter.
  4. Pour it into a soda siphon.
  5. Charge the siphon with a CO₂ cartridge.
  6. Shake well.
  7. Chill in an inverted bain-marie or in the refrigerator at 4°C for at least 2 hours before use.
