Non-Latte Chai Tea

Spicy chai based on almond drink and Naturfoam, served warm with a creamy texture and without milk. Ideal as a dairy-free alternative.Recipe by Martín Lippo. A warming, spicy drink based on almond drink instead of milk. The almond base accentuates the spices in a unique way. Thanks to the use of Naturfoam, the drink gets a creamy mouthfeel without dairy. Serve warm or cold – and endlessly vary with your own spice mix.

Ingredients

500gMineral water
0.6gCinnamon powder
0.2gpiment powder
3gEarl Grey tea
0.15gCardamom seeds
0.2gGinger powder
45gHoney
50gRaw, peeled almonds

500gAlmond drink
1gNaturfoam

Preparation

  1. Put all ingredients in a blender jug.
  2. Blend for 3 minutes at maximum speed.
  3. Strain using coffee filter paper.

  1. Add the Naturfoam to the almond drink.
  2. Blend briefly.
  3. Pour into a half-liter soda siphon.
  4. Charge with an N₂O cartridge.
  5. Shake well.
  6. Keep warm in a bain-marie at 50°C until serving.
