'Sweet Fries of mine' by Mitch Kramer.Winner of the 'Tastiest Fries with Topping' during the Lekkerste Competitions at the HORECAVA.

Ingredients

200gwinter truffle mayonnaise
100gdried Dutch sausage
1kgsweet potato fries
100gcheese-peanut crumble
1units.itemsBunch of parsley

Preparation

  1. Fry the fries at 160°C for 3 minutes. Let them drain well on kitchen paper.
  2. When serving, fry the fries at 175°C until they are nice and crispy. Drain in a container, sprinkle with salt, and shake well.
  3. Place a layer of fries on the 'plate' lined with greaseproof paper.
  4. Pipe the winter truffle mayonnaise/cream on top.
  5. Shave the Parmesan cheese over it to create a layer of cheese.
  6. Spread the rest of the fries over the previous layer and pipe more truffle mayo on top. Grate extra cheese over it and sprinkle with some old cheese crumble.
  7. Finally, shave the dried Dutch sausage over the fries with a microplane and top with fried parsley.
