200gwinter truffle mayonnaise
100gdried Dutch sausage
1kgsweet potato fries
100gcheese-peanut crumble
1units.itemsBunch of parsley
Preparation
- Fry the fries at 160°C for 3 minutes. Let them drain well on kitchen paper.
- When serving, fry the fries at 175°C until they are nice and crispy. Drain in a container, sprinkle with salt, and shake well.
- Place a layer of fries on the 'plate' lined with greaseproof paper.
- Pipe the winter truffle mayonnaise/cream on top.
- Shave the Parmesan cheese over it to create a layer of cheese.
- Spread the rest of the fries over the previous layer and pipe more truffle mayo on top. Grate extra cheese over it and sprinkle with some old cheese crumble.
- Finally, shave the dried Dutch sausage over the fries with a microplane and top with fried parsley.
