Fried cauliflower

Fried cauliflower.Serve with burrata, beurre noisette, tomberry tomatoes, and roasted hazelnuts.

Ingredients

Purple cauliflower
white cauliflower
hoijblanca olive oil
Salt

Preparation

  1. Clean the cauliflower and cut into slices of about 1 cm.
  2. Place the slices in a vacuum bag and vacuum seal with a splash of olive oil and some salt.
  3. Cook sous-vide at 75°C for 20 minutes.
  4. Cool quickly and place in the refrigerator.
  5. Remove the cauliflower from the vacuum and fry in olive oil or grill on the barbecue.
  6. Serve with burrata, beurre noisette, tomberry tomatoes, and roasted hazelnuts
