Fried ravioli

For colored ravioli, add squid ink or beet juice.

Ingredients

110mlwater (at 30°C)
200gfarina '00'
Salt
optional: Angostura bitters
Olive oil

Preparation

  1. Make a pasta dough from the ingredients.
  2. Optionally, add a little squid ink or beet juice for color.
  3. Roll the dough out thinly, fill as desired, and briefly fry the dough in oil at 180°C.
