Gratinated Brillat-Savarin with cranberry

The gratinated Brillat-Savarin with cranberry is a delicious fusion of creamy cheese and sweet-and-sour cranberries for a delightful explosion of flavor.For about 4 people. How fun is that? Ingredients

Cane sugar
125mlruby port
10gdried cranberry
0.5units.itemsCinnamon stick
1units.itemspickled walnuts
fig-port chutney

Preparation

  1. Heat the port together with the cinnamon stick.
  2. Add the dried cranberries and let infuse over low heat so the port soaks into the cranberries.
  3. Cut the top off the cheese and spread it with a little chutney.
  4. Sprinkle with cane sugar and gratinate using a blowtorch.
  5. Spoon the infused cranberries on top of the cheese.
  6. Slice the pickled walnut and press the slices around the cheese.
