Preparation
- Slowly cook the onions in a pan.
- Add the remaining ingredients and let simmer gently until it becomes a sticky chutney.
- Cook the medallions sous-vide for 30 minutes at 67°C.
- Briefly grill them on the barbecue before serving.
- Wrap the onion in aluminum foil. Roast the onion for 1 hour at 180°C.
- Remove the foil and the skin.
- Carefully clean the onion and peel it until you have nice shells.
- Fill the onion shells with the chutney.
- Wash the Swiss chard thoroughly in plenty of water.
- Remove the top leaf. Cut the stems into points.
- Braise the Swiss chard in water with butter until al dente. Season with pepper and salt.
