
Puffed black quinoa
Delicious as a crispy bite in a starter or amuse-bouche. Also surprisingly tasty on a dessert.Ingredients
black quinoa
powdered sugar or salt
Preparation
- Cook the quinoa until done in about 15 minutes, drain, and let dry overnight on a tray with paper or a cloth.
- You can also dry the quinoa for 1 hour in a dehydrator.
- Pop in a pan with oil at about 220°C for about 10 seconds. Pour into a sieve and let drain on paper.
- Depending on the application, you can sprinkle the quinoa with powdered sugar for a crispy topping on a dessert. If you use it in, for example, a salad, season it with salt.
