Roasted purple sweet potato with eel, crème fraîche and sweet potato chips

The sweet potato is also known as batata. This potato has purple flesh, and is oval and elongated in shape.The taste is sweet and a little spicy. Versatile in preparation, for example by boiling, pureeing, baking, or frying, but also very suitable for roasting.

Ingredients

Purple sweet potato

Finely chopped shallot
Chopped chives
Crème fraîche
smoked salt
Orange oil

150gEgg white
300gPurple sweet potato
Salt

Preparation

  1. Wash the sweet potato thoroughly.
  2. Wrap the sweet potato in aluminum foil.
  3. Bake the sweet potato in the oven at 180°C for about 1 hour.

  1. Mix all ingredients to taste to season the crème fraîche.

  1. Bake the sweet potato for about 1 hour at 180°C.
  2. Remove the skin from the sweet potato.
  3. Blend the sweet potato together with the egg white until smooth.
  4. Spread the mixture over a silicone mold.
  5. Dry the mixture for about 25 minutes in the oven at 100°C or about 1.5 hours in a dehydrator at 70°C.

  1. Place the roasted purple sweet potato on the plate.
  2. Top with crème fraîche and the purple sweet potato chips.
  3. Arrange pieces of eel on the purple sweet potato.
