Gnocchi of ricotta and watercress

This recipe comes from Sint-Lucie, the largest watercress company in Belgium. The watercress in this dish pairs well with the flavor of the ricotta.

Ingredients

250gCress
3Eggs
Pepper and salt
360gRicotta
80gParmesan cheese
150gFlour

Preparation

  1. Manually mix the flour with the cheese and ricotta in a bowl. Add pepper and salt to taste.
  2. Work the eggs into the mixture to form a dough.
  3. Mix the cress into the dough.
  4. Shape this dough into gnocchi, using extra flour to prevent sticking.
  5. Cook the gnocchi in water until done.
  6. Sauté the gnocchi in olive oil before serving.
