Golden pineapple dessert

This dessert consists of baked rum pineapple, airy coconut ganache, salty caramel cream, orange-coconut crumble, and vanilla ice cream.Serve in a golden pineapple.

Ingredients

Fine sugar

White rum
Clarified butter

150gWhipped cream
300gWhite chocolate callets
50gcoconut compound

Preparation

  1. Clean the pineapple and cut into even pieces.
  2. Melt the clarified butter and fry the pineapple pieces in it.
  3. While frying, sprinkle with fine sugar and let caramelize.
  4. Then deglaze with a splash of rum.
  5. Store the pineapple with the liquid in a container until use.

  1. Bring the cream to a boil.
  2. Then pour over the chocolate with compound and stir well until a smooth emulsion forms.
  3. Cool and whip until airy in the food processor before use.

  1. Whip cream with a scoop of salty caramel until soft peaks form.

  1. Melt 500 grams of orange chocolate au bain-marie.
  2. Mix in two to three tablespoons of granola.
  3. Pour out (about 5 cm thick) and let harden.
  4. Chop into small pieces to make a crumble.

  1. Place the pineapple at the bottom of the pineapple bowl and top with a generous scoop of vanilla ice cream.
  2. Pipe dots of ganache and salty cream on top using a piping bag.
  3. Finish with the orange-coconut crumble.
