endive in orange juice sous-vide
300gFine sea salt
8roasted garlic cloves
Preparation
- Cut the fins off the descaled pike-perch and empty the belly.
- Fill the belly with coarsely chopped lemon thyme, pepper, garlic, orange, and lemon.
- Whisk the egg white until fluffy and add the salt.
