Pickled sweet and sour tomatoes

Marinated with sushi vinegar and olive oil.

Ingredients

Arbequina olive oil
Sushi vinegar
various small cherry tomatoes
mason jar

Preparation

  1. Rinse the tomatoes thoroughly. Sterilize a preserving jar and place the tomatoes inside.
  2. Bring sushi vinegar to a boil and pour over the tomatoes. Add olive oil and seal the jar (use 6 parts sushi vinegar to 1 part olive oil).
  3. Store chilled (let sit for a few days for optimal flavor).
