Veal brisket with endive mash

veal chuck sous-vide
endive
classic mashed potatoes
Veal stock

Preparation

  1. Cut a slice of the veal chuck and sear in a pan.
  2. Heat the mashed potatoes and stir in the endive.
  3. Spoon the stamppot into the center of the plate and place the veal chuck on top.
  4. Heat the veal stock and spoon onto the plate.
