Kaltbach Creamy cheese dip

A delicious creamy cheese dip based on KALTBACH Creamy cheese.KALTBACH Creamy is a cheese made from whole cow's milk with a full flavor, refined with an extra portion of Swiss cream. The melting texture makes this cheese perfect for a creamy cheese dip. Ingredients for 4 people.

Ingredients

150gWhipped cream
1units.itemsthyme stem
125gKALTBACH Creamy
Salt
1units.itemsgarlic clove
Pepper
1units.itemsEgg yolk

Preparation

  1. Wash the thyme and shake dry. Bring the cream and thyme to a boil in a saucepan.
  2. Remove from the heat and let infuse for about 10 minutes.
  3. Remove the rind from the KALTBACH Creamy and grate it.
  4. Strain the cream into a bowl and let cool.
  5. Add the egg yolks and slowly heat while stirring over a warm water bath to about 85°C until the thyme cream begins to thicken.
  6. Peel the garlic.
  7. Remove the thyme cream from the water bath.
  8. Add grated cheese and garlic and blend finely with a hand blender.
  9. Season the dip with salt and pepper.
  10. Serve in a bowl with, for example, tortilla chips.
