Kik Pilav

A beloved classic: Kik Pilav. Tasty, with a perfect balance of spices, fresh vegetables, and creamy chickpeas.

Ingredients

500gBonduelle grilled eggplants
500gBonduelle crispy corn kernels
1kgBonduelle grilled red and yellow bell pepper
500gGrilled red onion
6units.itemsPeaches
500mlOlive oil
1Chopped garlic
600mlVegetable stock
1Chopped shallot
1Ginger syrup
140gTomato paste
1kgBulgur (cooked)
4ketjap manis
20gFlat-leaf parsley
Salt

Preparation

  1. Let the frozen vegetables and bulgur thaw, drain the corn and let it drain.
  2. Cut the peaches into wedges and grill until lightly marked, keep warm.
  3. Heat a tablespoon of oil and sauté the onion and garlic, add the tomato paste and cook off the acidity.
  4. Add the vegetable stock, ginger syrup, and soy sauce. Then add all the vegetables and heat through.
  5. Heat the rest of the oil and warm the bulgur in it. Meanwhile, chop the parsley and add to the bulgur. Season with salt.
  6. Serve the vegetables in a bowl on a plate and garnish with fried onions. Place a nice portion of bulgur next to it, top with the grilled peach and a bit of cress.

Tip: Are peaches out of season? Then use canned peaches and let them drain well.
