Preparation
- Put buttermilk, cucumbers, arugula, tarragon-chardonnay vinegar, agave syrup, and avocado in a blender and blend on high until it becomes a soup.
- Strain the mixture and season with salt.
- Chill the soup, pour into a bowl, and garnish with some smoked trout and a few drops of chili oil.
- Garnish with rings from the green part of 1 spring onion and chili oil.
