100gJapanese mayonnaise
30gLemon juice
8gDragon fruit powder
75gCondensed coconut milk
Preparation
- Cut the chicken thighs into quarters.
- Mix with za'atar spices (to taste) and let stand in the refrigerator for at least 1 hour.
- Mix the batter mix with the water and charcoal powder until you have a smooth black batter.
- Mix in the panko (for extra crunch).
- Coat the chicken thighs in the batter and deep-fry in oil at 160°C until crispy and cooked through.
- Blend everything with a hand blender into a sauce.
