Licking chocolate

Ice cream on a stick, coated with chocolate and finished with toppings of your choice. Perfect with coffee, as a dessert, or as a festive treat.

Made with the Silikomart mold 'Mini Classic'.

Ingredients

225gfruit purée of choice
210gWhite chocolate callets
25gInvert sugar
225gunsweetened cream
10gleaf gelatin
Silikomart molds 8 mini classics

Preparation

  1. Heat the fruit puree with the cream and sugar until the sugar is fully dissolved.
  2. Add the gelatin and let it melt.
  3. Pour the warm mixture over the white chocolate and mix together with a spatula.
  4. Pour into silicone ice cream molds. Freeze thoroughly.
  5. Melt chocolate of your choice (milk, dark, white) and add a little cocoa butter while melting so the chocolate becomes a bit thinner.
  6. Dip the ice creams into the chocolate (it will set quite quickly).
  7. Garnish the ice creams as desired, for example with dried fruit, nuts, yogurt crispies, etc.
  8. Let thaw, store in the fridge, and serve with coffee.
