Liefmans Cheesecake

Cheesecake with a speculaas base and a filling of Liefmans Fruitesse.

Ingredients

125gButter
260gSpeculaas
50gSugar
500gquark
12Gelatin sheets
400mlLiefmans Fruitesse
250mlWhipped cream

Preparation

  1. Line a baking tin with baking paper.
  2. Break the speculaas with a rolling pin or a mixer. Then melt the butter and add it to the speculaas crumbs. Spread this over the bottom of the baking tin, press it down well, and let it sit in the fridge for 15 minutes.
  3. Soak the gelatin sheets in cold water for 5 to 10 minutes.
  4. Meanwhile, loosen the quark in a bowl. Add the whipped cream and mix with the sugar until stiff. Then add 300 ml Liefmans Fruitesse.
  5. Squeeze the gelatin sheets well. Heat 100 ml Liefmans in a pan and dissolve the gelatin sheets in it.
  6. Add the gelatin mixture in parts to the quark mixture and stir well. Pour everything onto the cookie base and let it set in the fridge for 2 to 3 hours.
