300gButter
300gEgg white
370gIcing sugar
130gAlmond powder
Preparation
- Make beurre noisette from the butter. Strain and let cool.
- Put the flour, egg white, powdered sugar, and almond powder in the KitchenAid and mix with the paddle attachment. Fold the batter once (some often remains at the bottom that the machine can't quite reach).
- Mix once more and add the beurre noisette.
- Transfer to a piping bag when it is a homogeneous mixture.
- Spray the madeleine mold with pan coating and pipe the batter into the molds.
- Bake for 14 minutes at 175°C convection, fan on 4 bars.
