Celeriac fritters

A surprising and delicious use of celeriac.

Ingredients

265gcooked and puréed celeriac
120gFlour
10gBaking powder
50gWhole egg
Salt

Preparation

  1. Mix everything together in the food processor to make a batter.
  2. Let the batter rest for an hour, then use an ice cream scoop to scoop small balls and fry in oil at 180°C.
