Potatoes with red mojo sauce

Papas con mojo rojo, or potatoes with red sauce. The approximate cost per person is €1.10.

A summery dish inspired by the Canary Islands. The Dutch baby potatoes are roasted in the oven for about 30 minutes, that’s it! Serve with a mojo rojo. For this, blend pointed pepper, red chili, garlic, and smoked paprika powder into a smooth sauce.

Ingredients

Coarse sea salt
500gDutch baby potatoes

1units.itemsRed chili
1units.itemsPointed pepper
5units.itemsGarlic cloves
130mlOlive oil
40mlSherry vinegar
10gSweet smoked paprika powder
10gCumin powder
4gSalt

Preparation

  1. Sprinkle coarse salt in a roasting tray and place the Dutch baby potatoes on top.
  2. Bake the potatoes for 30 minutes in the oven at 200°C until cooked through.

  1. Put all the ingredients for the sauce in the blender and mix until a homogeneous sauce forms.

  1. Heat the potatoes in the oven at 180°C for about 10 minutes.
  2. Serve the potatoes with the sauce on the side.
