
Barbecued watermelon with a salad of sugar lettuce and grapefruit
It doesn't get more summery than this: watermelon from the barbecue. The approximate cost price per person is €1.75.The watermelon is impregnated with smoked olive oil and vacuum-sealed. This makes the watermelon firm and easy to grill whole. Thanks to the smoky flavor in the oil, the watermelon does not need to be grilled for long. Vacuum-sealing also extends the shelf life of the melon and makes it easy to prepare in advance. Delicious with a salad of sugarloaf lettuce and red grapefruit.

Preparation
- Cut the watermelon in half and divide it into 6 equal half-moons.
- Cut one half-moon into 6 equal pieces and place them in a metal baking dish.
- Drizzle the melon with smoked olive oil and let it marinate in the refrigerator for 30 minutes.
- Vacuum seal everything.
- Meanwhile, light the barbecue and bring it to 200°C.
- Pick the sucrine lettuce and keep it in a bowl.
- Finely chop the spring onion and set aside for garnish.
- Clean the grapefruit, squeeze out the juice, and reserve the juice.
- Grill the watermelon on both sides for 3 minutes on the barbecue.
- Serve the grilled watermelon on a platter and arrange the sucrine lettuce and grapefruit on top of the watermelon.
- Drizzle everything with grapefruit juice and a bit more smoked olive oil.
- Sprinkle the chopped spring onion on top.
