
Pasta pesto

Ingredients
50gbacon cubes
2Garlic cloves
1Lemon
1Shallot
3thick shavings of Parmesan cheese
Valderrama olive oil
2neatly fresh pasta Altoni
1Pesto
flat-leaf parsley
Preparation
- Cut the bacon into nice fine cubes.
- Finely chop the shallot and garlic.
- Cook the pasta in a separate pan.
- Take a pan and fry the bacon in olive oil.
- When the bacon has a nice color and is a bit crispy, add the shallot and garlic.
- Remove the pasta from the pan and add it to the bacon, shallot, and garlic.
- Now add the pesto along with three tablespoons of pasta cooking water.
- Add lemon zest and juice.
- Season with pepper and salt and flat-leaf parsley.
- Garnish with some more lemon zest, pepper and salt, flat-leaf parsley, and the Parmesan cheese.
