Peach amaretti ice cream

Parfait ice cream on a stick with peach puree, amaretti biscuits, and white chocolate.

Ingredients

1lDebic parfait
300gPeach purée
White chocolate
50mlPeach liqueur
bitter almond cookies

Preparation

  1. Whip 1 liter Debic Parfait until light in the planetary mixer and add 300 grams peach puree and 50 ml peach liqueur.
  2. Transfer to a piping bag, fill the silicone molds with the Debic Parfait and smooth the surface.
  3. Insert a stick and freeze for at least 4 hours.
  4. For the topping, bring the white chocolate to temperature and coarsely chop the amaretti cookies.
  5. Unmold the parfait pops and immediately pour over the chocolate.
  6. Garnish with the chopped amaretti cookies.
