Pornstar passion Cocktail of passion fruit and mandarin.Ingredients
150mlmandarin purée
600mlDebic Panna Cotta

750mlDebic Crème Anglaise
250mlpassion fruit purée
200gAlmond paste 1:1
Gold spray

250mlPassion fruit-mango coulis

Preparation
- Heat the panna cotta to 65°C and add the zest and juice of the mandarin. Let infuse for at least 20 minutes.
- Dissolve the orange coloring powder in a little panna cotta and add. Pass through a fine sieve or cloth and portion into the glasses.
- Let set further in the refrigerator for at least 6 hours.
- For the foam, mix the crème anglaise together with the passion fruit purée and pour into a siphon and aerate with 2 gas cartridges.
- Roll out the almond paste between two baking mats and bake at 150°C for 10 minutes. Place in the refrigerator or freezer and remove the top baking mat. Dry further in the oven or food dehydrator at 50°C for 1 hour.
- Break into pieces and spray with gold spray. Store in a well-sealed container with silicone granules.
- Pour a layer of coulis on the custard and pipe the passion fruit foam on top.
- Finish the cocktails with half a passion fruit, crunchy almond paste, and a purple violet.
