Roast chicken

Ingredients

180gButter
1units.itemsBresse chicken or poulet noir of 1.5 - 2 kilos
coarse 'fleur de sel'

Preparation

  1. Preheat the oven to 220°C.
  2. Melt the butter in a roasting pan and add olive oil.
  3. Sprinkle the chicken with some salt and pepper and brown it on all sides for about five minutes, so it gets a crispy brown crust.
  4. Place the chicken in the preheated oven for 20 minutes.
  5. Then lower the oven temperature to 120°C.
  6. Pour 200 ml of water into the dish and leave the chicken in the oven for another 25 minutes.
