Red buns

Steamed red buns with tomato salsa, spicy sriracha, and tempura prawns.

Ingredients

marinated sun-dried tomatoes
Lime juice
Tomatoes
Shallot

Tempura flour
Seasoning spices
Prawns
Beet juice

tabasco popcorn
Siracha smoked chili sauce

Preparation

  1. Peel the tomatoes and finely chop the shallot.
  2. Put all the ingredients in a mortar and grind into a salsa.

  1. Defrost the shrimp and pat them dry.
  2. Mix the tempura flour with water and a little beet juice for a nice color until it is about as thick as yogurt.
  3. Season to taste with the seasoning spices.
  4. Dip the prawns in the batter and deep-fry in oil until crispy.

  1. Steam the red buns until cooked.
  2. Spoon some salsa onto the buns.
  3. Pipe some spicy sriracha over them and place the prawns on top.
  4. Garnish with Tabasco popcorn.
