Preparation
- Cut the onions into half rings and caramelize them.
- Cut the pulled beef into coarse pieces and add them to the onions in the pan.
- Season with salt and pepper.
- Add the rosemary, bay leaf, and VOL5 to a pan and reduce the sauce until 200 milliliters remain.
- Add the agar agar, let the mixture boil for a minute, and then add it to the pulled beef.
- Let the mixture cool a bit. Then roll it in plastic wrap and let it cool for at least 12 hours.
- Cut off a slice and briefly fry it in a pan.
- Slice the onions and caramelize them in a pan with the rosemary and thyme sprigs.
- Remove the rosemary and thyme from the pan once the onions are caramelized. Then add the flour.
- Add the soy milk and cook the mixture until it thickens.
- Separate the onions from the soy milk mixture once they are fully cooked. Then blend the cooked onions and pass them through a fine sieve.
- Add the thick soy milk mixture to make a puree that is firm but still smooth.
- Reduce the VOL5 until 200 milliliters remain and remove the rosemary and thyme sprigs.
- Wash the potatoes and slice them into thin rounds with a mandoline.
- Wash the potato slices until the water runs clear.
- Dry the slices completely.
- Then fry them at 160°C.
- Let the potato chips cool and dry on a piece of kitchen paper.
