
Red beet with goat cheese and apple

Preparation
- Slice the cooked red beet thinly on the mandoline. Crumble the goat cheese and place between the beet slices.
- Thicken 2 deciliters of apple juice with Sosa gelcrem and season with honey. Pipe the apple juice with honey onto the goat cheese.
- Cut part of the apple into fine julienne and also place on the goat cheese.
- Fold the ends of the beet slices together and secure with a mini clip. Serve on a small dish of broad beans.
